iPad POS Inventory System Enhances Uko’s Green Design3 min read

In August, we brought attention to a July Nation’s Restaurant News report on the Umami Restaurant Group’s recent announcement of its plans to launch a new concept, eco-friendly, fast-casual chain in Los Angeles later this year. Dubbed simply “U-ko,” Umami’s founder, CEO, and majority partner, Adam Fleishman, described the new chain as a green and sustainable “21st Century fast food” version of his Umami Burger chain, which would feature touch-screen digital menus with the latest iPad POS inventory system to improve restaurant efficiency and reach tech-savvy Millennials. We promised to bring you updates as more information became available (see our previous blog post, “Crave and U-ko to use Digital Menu Display to Woo Millennials”).

Last month, architecture blog, architecturelist.com, reported that Santa Monica-based Kanner Architects has been working with Umami to draw up designs for the new concept restaurant chain, to be called Umami Ko or U-ko, for short. (“Umami” is Japanese for “delicious, savory taste”; “ko” is the kun reading of the Japanese kanji for “child”). The modular building, to be constructed from sustainable and recycled materials (including post-consumer recycled paper louvers, Forest Stewardship Council (FSC)-certified and reclaimed wood, salvaged aluminum waste, and recycled steel), is designed to be both energy and water efficient, may be expanded by adding modules, and can be configured as needed to meet various site demands. The interior space will be bright and open with a central indoor garden to naturally distribute the functional areas of the restaurant (entry, kitchen, kitchen access, bar, services, and dining). Each table in the dining area will be inlaid with a touch-screen digital menu, which will provide guests with photos and description of each food and beverage item offered, let them place their order and pay directly from the integrated iPad POS inventory system, and receive an electronic receipt of the transaction via email.

Umami has not yet disclosed whether U-ko will use an iPad POS inventory system, but the two POS systems function similarly: both enhance the environmentally-friendly design and improve restaurant efficiency by enabling customer-controlled ordering and payment (reducing service time, freeing servers to handle more tables, facilitating more table turns, and reducing errors and food waste), updating the menu and inventory in real-time (eliminating paper and printing costs, further reducing the restaurant’s carbon footprint), and providing restaurant management with up-to-the-minute operational data.
